The Euganean Hills are among the most northerly olive-growing areas in Europe, and we have more than 5,000 trees here, cultivated organically. The rich, pervious volcanic soil gives the oil an elegant profile, with low acidity and a high concentration of polyphenols. Notable among autochthonous olive varieties is the historic Rasara, a hardy cultivar strongly associated with the area.
The crop is harvested manually during October and November, with the aid of non-aggressive equipment. In the space of 24 hours, the olives are defoliated, washed and cold-pressed in our state-of-the-art mill. The oil is not filtered, but left to decant naturally at a controlled temperature so that its fragrance, properties and freshness are not lost.
Every step is managed in-house, from pruning to bottling, thereby ensuring a short and transparent supply chain. Our production of extra virgin olive oil — not least the prized Rasara monocultivar — is inspired by a combination of tradition and Agriculture 4.0. The result is a totally genuine and sustainable product that reflects the living identity of these famous hills.
