The Euganean Hills provide the ideal environment for growing vines, a tradition that goes back to pre-Roman times.
Our production philosophy is based on a thorough knowledge of our surroundings and on unceasing research, so that today, the ancient traditions of these parts can be merged with the latest innovations, resulting in small productions lots of real excellence.

After years of studying and refining our processes, we have become intimately acquainted with every grape variety and all of the single plots on our estate, carefully observing the response of each one in terms of quality and yield. This has helped us with the protection of local vine varieties and in the exploration of new avenues, adopting state-of-the-art techniques designed to preserve the integrity of the product and the credentials of the wine. Our identity as a Veneto winery is reflected in this approach: an identity built on attention to detail, which enables us to maximize the characteristics of each grape, even at the most delicate steps of the winemaking process, with the aim of offering credible and sustainable wines.

Every choice made in the vineyard comes from the promptings of the soil. We select the most suitable rootstock and clone for each plot, deciding also on the most effective training method and treatments. The technician walks along the rows, observes and listens, then decides with the agronomist on what should be done, and when. All in pursuit of a sole aim: to harvest at exactly the right time, when the grapes are at their best.

Organic and beyond, by choice

A sustainable approach that combines care for the natural world with the pursuit of excellence.

Here at our Veneto winery, we make organic wine from grapes grown in accordance with sustainable agronomic practices geared to the balance of the soil and the ecosystem, all with full environmental awareness in mind.

Our wine is completely vegan: the entire winemaking process is accomplished without using any products of animal origin. Only ingredients of vegetable origin are used.

Our vineyards are cultivated in accordance with the principles of organic farming, adopting a tailored rather than a standardized approach. Because the vines are monitored constantly by an expert technician, we can avoid scheduled treatments and take action only when effectively needed. Rather than spreading fertilizer with tractors and stressing the soil, we use fertigation — natural fertilizers dissolved in the irrigation water — which reduces the impact of CO₂ and helps the soil retain its vitality.

Employing the fertigation technique in our vineyards, we achieve a targeted distribution of water and fertilizers, responding to the needs of the soil only where and when strictly necessary, using an efficient drip system. In keeping with sustainable agriculture, this is a system that uses rainwater harvested in our reservoir, and artesian wells, creating a virtuous cycle that protects the environment and valorizes the end-product. By adopting this approach, we are able to:

  • Reduce the use of fertilizers to a minimum
  • Avoid all forms of water wastage

Production takes place entirely in temperature and humidity controlled environments, and is monitored through every stage of the wine-making process, from the moment the harvested grapes are brought in, to bottling of the finished wine.

Our winery is a completely independent enterprise, operating in full compliance with regulations concerning traceability for sustainable cultivation. Our supply chain is entirely internal, with every step of the production process managed on site, from pruning to bottling. This means we can guarantee quality, transparency and sustainability, ensuring that every step is carried out with due care and attention, and in perfect accord with the principles of environmental responsibility.

Our environmentally sustainable wine production also takes in bottling, storage and transport processes. To minimize our carbon footprint, we use lighter weight wine bottles with closures made of cork and Nomacorc, an expanded polymer derived from sugar cane, which is completely natural and recyclable. Every decision we take is designed to ensure minimal environmental impact while maintaining the excellence of our product.

Wine tasting and wine experience activities start at the Monte Fasolo Wine Bar in Via Monte Fasolo 2 – 35030 Cinto Euganeo, Padua, and continue within the selfsame winery buildings. The Le Volpi Winery is in fact located on the same site as the Monte Fasolo Wine Bar.
